Yes, I'll be smoking three racks of ribs today on the Big Green Egg! It's a good thing I purchased the rib rack as it'll really do it's job today!
Thing 2 will easily eat maybe a full rack herself. She loves ribs! She devours them to the bone and really quickly too. It's insane to watch her eat a rack of ribs.
I might have to thaw out a fourth rack just in case. Nah, I purchased five a while back and I'll just smoke all five today. That'll give everyone plenty to eat:)
Not sure if I'll throw a rub on them or maybe even a simple salt and pepper mix. I'll have to get back to you on how I cook them today.
